Dubai’s much-loved dining gem, Folly, has officially reopened, and it’s more elegant than ever. Now calling the Address Montgomerie Hotel in Emirates Hills home, the newly reimagined Folly Brasserie brings the same ingredient-led flair to a fresh, light-filled conservatory setting.
With heritage-green steel, cascading indoor and outdoor fountains, high ceilings and wraparound glass, the space takes stylish to new levels. And there’s more than just a new look, the Folly Brasserie menu, now reflecting modern European cuisine, brings together classic comfort with contemporary flair, shaped by seasonal partnerships with local farmers.

Weekends feature the Botanical Brunch, an afternoon of floral cocktails – we recommend the ‘whispers of a martini’ with sustainably-minded Ketel One, dragon & passion fruit, vanilla, and Prosecco – seasonal sharing dishes and live music.
It’s great for vegetarians and vegans, with highlights including beautiful beetroot bites with tapioca crisp as a sharing canapé, heirloom tomato salad with stracciatella and gazpacho, a glazed and roasted carrots medley, with sides of parmesan broccoli with pine nuts and herb roasted parmentier potato. And ditch the carb diet for the incredible thrice-cooked chips with herb infused emulsion, they’re oh so worth it! To drink, accompany it with Alberto Nani – a light sparkling vegan, organic Prosecco.
Naim Maadad, CEO and Founder of Gates Hospitality, calls this ‘an exciting new chapter’ for the brand. ‘Our vision is to offer guests a memorable dining experience that combines the vibrancy of a contemporary European brasserie with the warmth and familiarity that Folly has always been known for,’ he says.
