As the mercury rises cool off with summer’s perfect tipple – a glass of iced tea. Whether it’s the zesty allure of a hibiscus daiquiri or the enchanting combination of jasmine and kiwi in a cobbler, these refreshing recipes will quench your thirst in style.
These mocktails are easy to make, pack a punch of flavour and will impress your guests. We’ve used Newby London, the luxury brand of premium teas, but you can experiment with flavours and brands to create the coolest drinks for sundowners.
Hibiscus Daiquiri Iced Tea

- Rosehip and Hibiscus Tea Bag
- 75ml hot water
- Ice cubes
- 1tsp honey
- Fresh mint leaves, sprig and kiwi, sliced (optional)
Brew Newby Tea’s Rosehip & Hibiscus tea in 75ml of hot water for 3 minutes. Strain the brewed tea and pour it into a cocktail shaker. Add ice cubes and a touch of honey for natural sweetness.
Cover the shaker and shake vigorously to mix the flavours. Pour the delicious concoction into a hurricane glass and garnish with fresh mint leaves and kiwi slices.
Dalton Chai Iced Tea

- Masala Chai Tea
- 2tsps sugar
- 75ml hot water
- Mixed spices (cardamom pods, cinnamon sticks, cloves, lemongrass and lavender flower buds all go well)
- 2tbs milk and cream, blended together
- Ice cubes
- Whipped Cream, whipped to stiff peaks (you could use squirty cream from a can if desired)
Brew Newby Tea’s Masala Chai Tea in 75ml of hot water for 3 minutes. Add sugar to the brewed tea and simmer until it thickens slightly. Enhance the flavour by adding spices to the brew.
Mix the thickened tea with 2 tablespoons of milk and cream, whisking until the desired texture is achieved. Fill a highball glass with ice and pour over the tea and top it off with a dollop of whipped cream.
Jasmine Kiwi Cobbler Iced Tea

- Jasmine Blossom Tea
- 75ml hot water
- Kiwi puree (you can mash up a kiwi)
- 1tbs honey
- Ice cubes
- Fresh mint leaves, sprig and orange slices
Brew Newby Tea’s Jasmine Blossom tea in 75ml of hot water for 3 minutes. Strain the tea and pour it into a cocktail shaker. Add kiwi puree, honey, and ice cubes to the shaker.
Cover the shaker and shake vigorously to blend the flavours. Pour the heavenly mixture into a cobbler glass and garnish with fresh mint leaves and slices of orange.
